Zesty coleslaw

A light and fruity version of the humble coleslaw that children will love.

Zesty coleslaw

Method

  1. Mix cabbage, bok choy, carrots, spring onion, sultanas and pumpkin seeds together in a serving dish.
  2. Add dressing ingredients to a jar, close the lid and shake to combine.
  3. Mix the Vinaigrette ingredients in jar and shake.
  4. Pour the dressing over the salad, toss and serve.

Tips

Ensure portion sizes are appropriate for the age of the children. Serve half the amount for younger children or a smaller portion.

You need

  • 3 cups finely sliced red or green cabbage
  • 1 cup finely sliced bok choy
  • 2 carrots, julienned or coarsely grated
  • 1 spring onion, finely sliced
  • 2 Tbsp sultanas
  • 2 Tbsp orange vinaigrette dressing*
  • Orange Vinaigrette Dressing (makes 1 cup)
  • 1/2 cup orange juice
  • 1/4 cup canola oil
  • 1/4 cup white vinegar
  • to taste white pepper
  • 1-2 tsp orange zest, finely grated
