Vegetable curry

An easy way to spice up your veges.

Vegetable curry

Method

  1. Spray a frying pan with canola oil, add onions and stir fry until clear. Add curry paste and stir fry 2-3 minutes.
  2. Add kumara and pumpkin, water and coconut milk.
  3. Bring to the boil, reduce heat and simmer for 20 -25 minutes or until vegetables are just tender.
  4. Stir through spinach and heat until wilted.
  5. Serve garnished with coriander.

  • 1-2 Tbsp green curry paste
  • 1 cup peeled and diced red kumara
  • 1 cup peeled and diced pumpkin
  • 1 cup water
  • 1 cup lite coconut milk
  • 2 cups chopped spinach
  • 1 Tbsp chopped parsley or coriander
