Tuna Pizza

Some sweet vegetables make for an appealing way to get kids eating tuna.

Tuna Pizza

Method

1. Preheat the oven to 190 degrees C.
2. Half each English muffin.
3. Mix the diced capsicum, sweetcorn, tuna and half of the cheese.
4. Place the English muffin halves cut side up onto a baking sheet. Spread each muffin base with 1 tsp of tomato puree.
5. Divide the tuna mix over, then sprinkle with the remaining cheese.
6. Bake for 15 minutes until melting and golden.

You need

  • 2 English muffins
  • 185g Tuna, canned drained
  • 1 small Red capsicum, diced
  • 100g Sweetcorn, frozen or fresh
  • 50g Edam cheese, grated
  • 8 tsp Tomato puree
