Tuna Pasta Salad

An easy to prepare and tasty salad that meets the everyday criteria.

Tuna Pasta Salad

Method

  1. Fill a large pot with water and bring to the boil.
  2. Stir in the pasta, return to a boil.  Leave uncovered, stirring occasionally until the pasta has cooked through.
  3. Drain and rinse the pasta in cold water.
  4. In a large bowl, mix cooked pasta with onion, lemon juice, capsicum, spring onion, cucumber and tuna.
  5. Toss lightly until throughly combined

Portions

Ensure portion sizes are appropriate for the age of the children. Serve half the amount for younger children or a smaller portion.

You need

  • 300g dried wholemeal pasta (any bite-sized pasta - macaroni/small shells/spirals)
  • 1/4 onion, peeled, finely chopped
  • 1/2 lemon (juice)
  • 1/2 red capsicum, seeded, finely chopped
  • 1 stem spring onion, finely chopped
  • 1/4 cucumber, finely chopped
  • 300g tuna, canned in springwater (drained)
