Skordalia

A traditional Greek side dish usually served with fish or vegetables but can be used as a dip as well.

Method

  1. Soak the bread in the water.
  2. Put all ingredients into a food processor.
  3. Blend until smooth.

You need

  • 100g wholemeal bread, stale
  • 300ml water
  • 175g blanched almonds
  • 15g garlic
  • 40ml olive oil
  • 50ml lemon juice
  • 1g chilli powder
  • 1g pepper
