Turn your leftover veges into these tasty kūmara cakes

Savoury Vege Cakes

Method

  1. Microwave kūmara in a little water until tender (about 5 minutes).  Then mash.
  2. Cook onion in a pan or micorwave under soft.
  3. Mix all ingredients together expect breadcrumbs.  Put breadcrumbs on a plate.  
  4. Divide mixture into four.  Put a quarter of the mix in a mound on the breadcrumbs and form into a circle about 2cm high and flatten.  Lift carefully onto a sheet of baking paper.
  5. Sprinkle the top of the pattie with breadcrumbs.
  6. Once all the patties are made, place in the fridge to chill.
  7. Turn on the oven and heat to 180°C.  Once the oven is heated, lift baking paper and patties onto an oven tray and cook for 20 minutes.

You need

  • 2 medium (350g) Kūmara, peeled and cut into chunks
  • 1 Onion, finely diced
  • 2 Garlic cloves, crushed
  • 1 Carrot, grated
  • 5 Button mushrooms, finely diced
  • 1/2 cup Frozen peas
  • 1 Egg
  • 1 Tbsp Soy sauce (salt reduced)
  • 1 tsp Ginger, finely chopped
  • Wholemeal breadcrumbs
