Red bean salsa

Simple and delicious red bean salsa recipe. There's no cooking involved!

Method

  1. Mix all ingredients together in a large bowl.
  2. Cover and refrigerate for 20 minutes or until ready to serve.

Tip

Red kidney beans are cheap and easy to prepare. They are part of the legumes food group which are low in fat, high in fibre, high in protein and have a low GI.

You need

  • 1 can red kidney beans , drained
  • 1 mango, diced
  • 1 avocado, diced
  • 2 tomatoes, diced
  • ½ cup fresh coriander, chopped
  • 3 tsp lemon or lime juice
  • ¼ cup red onion, chopped
  • 1 chilli, seeded and sliced (optional)
  • 1 can whole kernel corn, drained
  • 2 cloves garlic , crushed

Method
