Pineapple Rice Pudding

Pineapple Rice Pudding

Method

  1. Place the milk, coconut-flavoured evaporated milk, rice and sugar in a saucepan with a heavy base.  Bring the mixture to the boil, then reduce the heat and simmer, stirring occasionally for 45 minutes or until the mixture thickens.
  2. Add the pineapple (with juice) and continue cooking until the mixture is thick and creamy.

You need

  • 1 litre reduced-fat milk
  • 1 can coconut-flavoured light evaporated milk (375ml)
  • 3/4 cup short grain brown rice
  • 1/4 cup sugar
  • 1 can crushed pineapple in natural juice (440g)

Method
