Pesto Pasta Chicken Salad

This everyday recipe is quick to assemble so great for both ECE services or canteens.

Pesto Pasta Chicken Salad

Method

Cook pasta according to instructions on the package. When pasta is cooked, but still firm (al dente) remove pasta from heat and drain away water with a sieve.
Place drained pasta in a bowl and toss through pesto while the pasta is still warm.
Put pesto pasta aside to cool to room temperature.
Once pesto pasta has cooled add all other ingredients and toss gently.
Serve.

You need

  • 500g packet wholemeal pasta spirals or macaroni
  • 3 cups chicken, shredded
  • 200g cheese, feta or edam, crumbled or cubed
  • 50g pesto
  • plus assorted veges of your choice - we have used:
  • 3 cups baby spinach leaves
  • 1 capsicum, red, chopped
  • 1 onion, red, chopped
  • 1 punnet cherry tomatoes
