Overnight bran muffins
Try these high-fibre muffins for a filling afternoon treat.

Method
- Sift the flour, baking soda, cinnamon and sugar. Stir in the bran and the chopped dates.
- Make a well in the centre of the mixture and add the oil, yoghurt, honey, and egg. Mix until combined. Cover and refrigerate overnight.
- Preheat oven to 180°C. Drop tablespoons of mixture into large muffin cases until ¾ full. Bake in the oven for 20 minutes, or until cooked when tested with a skewer.
Tip
The mixture for these muffins can be made a day in advance so you can bake a fresh batch quickly when needed.

- 1 ¼ cups plain flour

- 100 ml canola oil
- ½ cup Yoplait Yoghurt
- 2 Tbsp honey
- 1 egg, lightly beaten
