Onion Dip

A healthy twist on a kiwi classic that children will love with vegetables.

Onion Dip

Method

  1. Place onion and olive oil in a heavy frying pan.
  2. Heat slowly and saute very gently for approximately 1 hour, stirring often.
  3. Add water to pan and bring to a very gentle simmer.
  4. Simmer until all the water has evaporated.
  5. The onion should be a deep, light golden colour.
  6. Add onion powder and vinegar and reduce to a paste.
  7. Allow to cool completely.
  8. Mix onion mixture with sour cream and yoghurt.
  9. Refrigerate until ready to serve.

You need

  • 4 onions, finely diced
  • 1 Tbsp olive oil
  • 1 cup water
  • 2 Tbsp white wine vinegar
  • 2 tsp onion powder
  • 1/3 cup light sour cream
  • 1 cup unsweetened yoghurt
