Mexican Chicken Roll-ups

A tasty and nutritious, convenient meal that can be put together in a few minutes.

Mexican Chicken Roll-ups

Method

  1. Preheat the oven to 200°C.
  2. Combine the chicken, sour cream, mushrooms and half of the tomatoes.
  3. Divide the mixture between the wraps.
  4. Roll wraps around the mxiture to form a cylinder.
  5. Place filled wraps with the seam down in an oven proof dish.
  6. Spoon the remaining tomatoes over the top of the wraps.
  7. Sprinkle the cheese over the top of the tomato.
  8. Bake for 15-20 minutes or unitl the cheese is golden brown.

You need

  • 2 cups cooked chicken, shredded
  • 2 Tbsp low fat sour cream
  • 1 cup mushrooms, finely chopped
  • 1 cup chopped tomatoes, canned
  • 4 wholemeal wraps or tortillas
  • 1/3 cup edam cheese, grated
