Lunchbox meatballs

Lunchbox meatballs

Method

  1. Heat oven to 225°C.
  2. Mix all ingredients together and knead until a little bit sticky.
  3. Roll into small bite sized balls and place on a lightly greased roasting tray.
  4. Roast in oven for approximately 15-20 minutes or until cooked through and browned.
  5. Remove from oven and serve hot or allow to cool on the tray.

You need

  • 350g beef, lamb or pork mince
  • 2 medium carrots, finely minced
  • 1 clove garlic, crushed
  • 1 egg
  • 1 cup dry wholemeal breadcrumbs
  • 2 Tbsp fresh herbs, chopped (eg parsley, chervil, rosemary, thyme, oregano, basil, sage)
  • 1 tsp lemon zest, finely chopped (optional)
  • 2 Tbsp tomato paste
