Lemon Yoghurt Muffins

Makes 10 standard muffins or 36 mini muffins.

Lemon Yoghurt Muffins

Method

  1. Preheat oven to 180ºC.
  2. Place the lemon rind, sugar, oil, egg, salt, yoghurt and lemon juice in a large bowl.  Beat until well mixed.
  3. Add the flours and baking powder; fold in until the flour is just mixed in.  Do not over-mix as this will toughen the mixture.
  4. Spoon mixture into lightly oiled or non-stick muffin pans.  Bake for 12-15 minutes or until a skewer inserted comes out clean.
  5. Leave to stand for 5 minutes before removing from pans and cooling on a rack.

You need

  • 3/4 cup sugar
  • 1/4 cup oil
  • 1 large egg
  • 1/2 teaspoon salt
  • 1 cup plain yoghurt
  • 1/4 cup lemon juice
  • 1 cup wholemeal flour
  • 1 cup plain flour
  • 2 tsp baking powder
