A healthy alternative to hot chips for school canteens.

Kumara wedges with tomato salsa

Method

  1. Preheat oven to 200°C. Place kumara in a roasting pan and spray lightly with canola oil. Toss to coat.
  2. Bake in preheated oven for 25-35 minutes or until golden brown and crunchy. Turn several times during cooking.

Salsa

  1. Mix all ingredients together.

You need

  • 3-4 kumara, washed and sliced into wedges
  • Tomato salsa
  • 2-3 tomatoes, cored and diced
  • 1 spring onion, finely sliced
  • freshly ground black pepper, to taste
  • 1 Tbsp sweet chilli sauce
