Fruity Rice Salad

A tasty salad that includes both fruit and vegetables!

Method

  1. Place all the salad ingredients in a bowl.
  2. Mix the dressing ingredients together in a jar and shake well.  Add to the salad ingredients and mix through.

Note:  If your centre or school is nut free, the peanuts can be omitted from the recipe and/or subsituted for seeds.

You need

  • SALAD
  • 1 cup cooked brown rice
  • 1 red pepper, seeded and diced
  • 1 can whole kernel corn, 400g can
  • 3 Tbsp raisins
  • 1 can pineapple pieces in juice, 400g can
  • 4 spring onions, sliced thinly
  • 1/2 cup roasted peanuts, roughly chopped (optional)
  • DRESSING
  • 1/3 cup juice from pineapple
  • 1 Tbsp soy sauce (low salt)
  • 1 Tbsp canola oil
