Fried rice

A great healthier version of a vegetarian fried rice recipe

Fried rice

Method

  1. Heat the wok or frying pan; add the oil, garlic and ginger.
  2. Add the onion, peppers, carrot, mushrooms and courgette; stir-fry for about 5 minutes.
  3. Add the rice, peas, corn and soy sauce and stir fry for a further 5 minutes until heated through.  Serve.

Variations
  • Add finely chopped lean ham or bacon.
  • •Add lean chicken or pork.
  • •Add water chestnuts for extra crunch.
  • •Add omelette strips - whisk 2 eggs together, pour into a clean, hot, non-stick pan and leave until cooked.  Lift out of the pan, allow to cool slightly and then cut into strips.  Add to the fried rice with the corn and peas.

You need

  • 1 teaspoon vegetable Oil
  • 1 teaspoon crushed Garlic
  • 1 teaspoon grated ginger
  • 1 medium onion, finely diced
  • 1 pepper, red and/or green, diced
  • 1 carrot, finely diced
  • 100g mushrooms, sliced thinly
  • 1 medium courgette, diced
  • 1 cup brown rice, cooked
  • 1 cup frozen peas, thawed
  • 1/2 can whole kernel corn, 400g can
  • 2 tablespoons soy sauce (low salt)
