Fish Burgers

A delicious light burger patty that can fill a burger bun, pita pocket or just by itself.  Great served with salad and tartare sauce.

Method

Tartare Sauce (Optional)

1. Mix together the yoghurt, mayonnaise, mustard, gherkins, parsley and lemon juice
2. Refrigerate until ready to serve

Fish Burgers

1.Finely chop or blend fish fillets in food processor until very finely chopped but not a smooth paste
2.Add remaining ingredients except oil and mix thoroughly
3.Shape into burger patties
4.Heat a frying pan with oil and cook patties until brown on each side

You need

  • Fish Burgers
  • 500g fish fillets
  • 250g zucchini or carrot, grated
  • 5g parsley, chopped
  • 45ml lemon juice
  • 5g curry powder
  • 2 egg
  • 65g wholemeal breadcrumbs
  • 30ml vegetable oil
  • Tartare Sauce (Optional)
  • 250g unsweetened, low-fat yoghurt
  • 75g low-fat mayonnaise
  • 5g mustard
  • 80g gherkins, finely diced
  • 10g fresh parsley, finely chopped
  • 30ml lemon juice
