A delicious wheat and gluten free muffin that is simple to make.

Delicious Gluten Free Berry Muffins

Method

  1. Preheat your oven to 200°C and lighlty grease 8 medium or 16 mini muffin tins.
  2. Combine the Simple Baking Mix, baking powder and sugar in a large bowl.  Add berries and toss lightly to coat with the dry mixutre,
  3. In another bowl add milk, oil, egg, vanilla essence and whisk together.
  4. Pour liquid ingredients over dry ingredients and mix lightly until all the ingredients are just combined.
  5. Spoon  your mixutre into the prepared muffin tins and bake for about 20-25 minutes.  Stand before removing from tins.

  • 2 tsp baking powder**
  • 1/2 cup sugar
  • 3/4 cup fresh or frozen berries
  • 1/2 cup reduced fat milk
  • 2 Tbsp vegetable oil
  • 1 egg
  • 1/2 tsp vanilla essence
