Delicious Gluten Free Berry Muffins
A delicious wheat and gluten free muffin that is simple to make.
Method
- Preheat your oven to 200°C and lighlty grease 8 medium or 16 mini muffin tins.
- Combine the Simple Baking Mix, baking powder and sugar in a large bowl. Add berries and toss lightly to coat with the dry mixutre,
- In another bowl add milk, oil, egg, vanilla essence and whisk together.
- Pour liquid ingredients over dry ingredients and mix lightly until all the ingredients are just combined.
- Spoon your mixutre into the prepared muffin tins and bake for about 20-25 minutes. Stand before removing from tins.

- 2 tsp baking powder**
