Cucumber sandwiches

Sandwiches, but not as you know them.

Cucumber sandwiches

Method

  1. Slice cucumber into rounds.
  2. Combine avocado, lemon juice and yoghurt. Mash together. Add tuna and combine.
  3. Lay out half of the cucumber disks and scoop filling on top.
  4. Cover with the other half of the disks.

Tip

Keep the quantities of avocado, tuna and yoghurt equal for the best results.

  • ½ x185g tin tuna
  • ½ avocado
