Crumbed Fish Fingers

A deliciously healthy alternative to bought fish fingers that meet the sometimes criteria.  Once made these can be frozen and be just as convenient as well.

Method

Fish Fingers

  • Heat oven to 200°C.
  • Mix together the breadcrumbs with lemon zest and dried herbs.
  • Dip the fish into the flour to lightly cover all surfaces.
  • Dip the floured fish into the beaten egg.
  • Dip egged fish into breadcrumb mixture so all surfaces are covered.
  • Place crumbed fish fingers on a lightly greased oven tray.
  • Bake for approximately 10 minutes or until cooked through.
  • Serve warm.

These fish fingers freeze well and can be cooked easily from frozen.  Simply follow the procedure up until placing them on a tray and then freeze instead of cooking.  Once frozen transfer to a sealed container. When you want to cook your fish fingers, take some from the freezer and place on a baking tray and bake.  Allow an extra 5 minutes cooking time.

You need

  • 160g wholegrain breadcrumbs
  • 5g lemon zest
  • 2tsp mixed dried herbs
  • 100g wholemeal flour
  • 4 eggs, beaten
  • 850g fresh fish, cut into fingers
