A healthier alternative to chips.

Crispy potato rounds

Method

  1. Preheat oven to 230°C. Line two oven trays with baking paper.
  2. Spread potato/kumara rounds on both prepared trays, toss with a drizzle of oil and sprinkle with seasoning if using (see variations below).
  3. Cook for 25 minutes, until golden and cooked through. Half way through cooking, turn the rounds over and swap trays over to ensure even cooking.

Variations

Enjoy plain, or try with one of the following seasonings:

  • Cracked pepper and a squeeze of lemon juice.
  • 2 tsp dried mixed herbs.
  • 2 tsp Mexican seasoning (1Tbsp ground cumin; 1Tbsp ground coriander; 1Tbsp paprika; 1tsp dried oregano or mixed herbs, ½ teaspoon chilli powder ½ teaspoon onion or garlic powder).

You need

  • 600g potatoes or kumara, scrubbed then sliced into 5mm thick rounds.
  • drizzle of vegetable oil
