A great soup recipe which is perfect for children.

Creamy vegetable soup

Method

  1. In a large saucepan or stockpot, soften the onion in the oil.
  2. Add the vegetables and the water or stock and simmer with the lid off until the vegetables are very soft, then purée or mash.
  3. Mix the skim-milk powder and flour to a smooth paste with water, add to the soup and simmer for a few minutes until thickened and creamy. Add extra liquid or flour paste to adjust thickness and quantity.

You need

  • 1 onion, chopped
  • 2 teaspoons oil
  • 2 cups seasonal vegetables, chopped e.g. pumpkin, parsnip, kumara, carrot
  • 1 litre water or low-salt stock
  • 1/2 cup skim-milk powder
  • 2 tablespoons wholemeal flour
