Corn And Lentil Fritters

Method


The yields below allow for 2 fritters per person.

  1. Gently mix together flour, baking powder, lentils, creamed corn, whole corn kernels, eggs and parsley until just combined.
  2. Heat a well seasoned skillet or non-stick frying pan.
  3. Lighlty oil the pan with canola oil.
  4. Fry fritters in pan until golden brown on each side.

  • 210g wholemeal flour
  • 8g baking powder
  • 325g lentils, canned, drained and rinsed
  • 670g cream corn, canned
  • 460g whole corn kernels, canned, drained, rinsed
  • 5 eggs
  • 17g parsley
  • 20ml canola oil
