Cocoa Rice

A filling dessert that children of all ages will love.

Cocoa Rice

Method

  1. Place all ingredients, except coconut milk, in a saucepan.

  2. Bring to the boil and then lower to a gentle simmer, stir occasionally to avoid it sticking to the bottom.

  3. Continue to cook slowly until the rice is cooked and covered in a creamy chocolate sauce (or desired consistency) about 30-40 minutes.

  4. Take off heat, add the coconut milk and stir through.

  5. Remove the citrus leaves before serving.  Add a little reduced-fat milk if a thinner mixutre is required.

*  Citrus leaves can be picked from unsprayed citrus trees.  Use the very young leaves at the tip of the branch.  Lemon leaves are the best to use.

†  Instead of coconut milk, try using coconut-flavoured light evaporated milk.

  • ⅓ cup medium grain brown rice
  • 3 cups water
  • 2 Tbsp cocoa, or grated koko Samoa
  • 1½ Tbsp sugar
  • 1 young citrus leaves* or grated lemon rind
