Chicken Curry

A tasty meal including both protein and vegetables!

Chicken Curry

Method

  1. Remove any excess fat from the chicken.
  2. Place the chicken and bay leaves in a large saucepan or stockpot.
  3. Cover witih water and simmer for 45-50 minutes or until the juices run clear when a skewer is inserted.
  4. Reserve 1 ½ cups of the cooking liquid.
  5. Discard the chicken skin and bone and cut the meat into bite-sized peices.
  6. Heat the oil in a large saucepan.
  7. Add the carrots, onion, and curry powder.
  8. Saute until lightly browned.
  9. Add the flour and mix well.
  10. Gradulary add the reserved cooking liquid, stirring continuously, and heat until thickened.
  11. Add the chicken, milk and sultanas.  Heat through.  Season to taste with pepper.

Portions

Ensure portion sizes are appropriate for the age of the children. Serve half the amount for younger children or a smaller portion.

Variation

If using cooked chicken, use 1½ cups of chicken stock instead of the cooking liquid from Step 4.

  • 1.2kg chicken
  • 3 bay leaves
  • 1 Tbsp vegetable Oil
  • 2 large carrots, finely chopped
  • 1 large onion, finely chopped
  • 1 Tbsp curry powder
  • 1½ Tbsp wholemeal flour
  • ½ cup low-fat milk
  • ¼ cup sultanas
  • freshly ground black pepper
