A tasty snack including both vegetables and dairy products that meets the everyday criteria.

Cheesie Tomato Toast Fingers

Method

  1. Preheat oven to 180°C.  In a small bowl, stir together cottage cheese with finely chopped herbs until thoroughly combined.
  2. Halve tomatoes, toss in olive oil, salt and pepper, and roast until soft.  Around 15 minutes.
  3. Slice french stick diagonally into 10 slices and place on a baking sheet, or slice wholemeal bread into fingers.  Toast in oven until golden brown, about 5 minutes.
  4. Spread toast slices with cheese mixture and top with the roasted tomato.
  5. Sprinkle with fresh herb on top of the toast and serve.

  • Instead of tomato, you can use fresh chopped tomato for topping.
  • Other options for toppings are hummus, reduced fat cream cheese, edam cheese, mashed avocado, mashed egg, and shredded chicken.

You need

  • 1 stick french stick (or 10 slices of wholemeal bread)
  • 200g cottage cheese
  • 7 tomatoes, small
  • 2 Tbsp fresh herb, finely chopped
  • 1 Tbsp olive oil
  • pinch black pepper
