Cauliflower Croquettes

These cheesy cauliflower croquettes will be a hit with children and adults alike.  Serve three for an adults portion or one to two for a child.

Method

  1. Cut the cauliflower into florets and boil until tender, drain
  2. Heat a large pot and gently cook the onion with the oil
  3. When the onion is soft add the cauliflower, drained currants and chopped nuts
  4. Continue to cook and mash with a fork or potato masher until it is a pulpy texture
  5. Remove from heat and allow to cool
  6. Heat oven to 220°C
  7. Once cool, add remaining ingredients and mix thoroughly
  8. Roll into egg shapes or quenelles
  9. Place on baking tray and bake for approximately 15 minutes or until golden brown.

  • 125g onion, finely diced
  • 25ml vegetable oil
  • 30g toasted nuts or seeds, chopped
  • 3 eggs
  • 60g breadcrumbs
  • 130g edam cheese, grated
  • 5g herbs- fresh or dried, chopped
  • 10g dried, ground spices such as paprika, fennel, pepper
