Butter(less) Chicken

A favourite choice for many children when choosing a hot lunch item.  This clever twist on the classic butter chicken meets our everyday criteria.

Butter(less) Chicken

Method

  1. In a large saucepan heat the canola oil and add onion, sauté until soft over medium heat.
  2. Mix the diced chicken with the tumeric, cumin, nutmeg, pepper and gram masala.
  3. Add the chicken to the pan and brown lightly on each side.
  4. Add the tomato paste, water and sugar.
  5. Cook gently until chicken is cooked through.
  6. Remove from the heat.
  7. In a seperate saucepan gently heat the evaporated milk.
  8. Add warmed evaporated milk to the other ingredients and serve.

You need

  • 25ml canola oil
  • 360g onion, diced
  • 25g garlic, crushed
  • 1.25kg chicken thigh fillets, skinless and diced
  • 2 tsp turmeric, ground
  • 3 tsp cumin, ground
  • 1 tsp nutmeg, ground
  • 1 tsp black pepper
  • 1 tsp masala
  • 125g tomato paste, low salt
  • 310ml water
  • 5g sugar
  • 400ml low fat evaporated milk
