Blancmange with berries

Despite the fancy name this dairy dessert couldn't be any more simple.

Method

  1. Place the first measure of milk in a saucepan with star anise, cinnamon or vanilla, and honey, heat slowly.
  2. Mix the second measure of milk with the cornflour until smooth.
  3. When milk in saucepan is just about to simmer, very slowly pour in cornflour mixture and stir constantly until thickened.
  4. Pour into serving dish and allow to cool.
  5. Refrigerate until ready to serve.
  6. Place fruit on top and serve.

You need

  • 1L milk, reduced fat (1st)
  • 1 tsp vanilla essence
  • 2 Tbsp or 1 stick star anise/cinnamon stick or vanilla
  • 2 Tbsp honey
  • ½ cup cornflour
  • 100ml milk, reduced fat (2nd)
  • 1 ½ cups fresh berries or chopped fruit
