Banana and date muffins

This recipe makes 24 standard muffins or 48 mini muffins

Banana and date muffins

Method

  1. Preheat oven to 190°C.
  2. Place the first 4 ingredients in a bowl. 
  3. Dissolve the baking soda in milk. 
  4. Melt the margarine and golden or maple syrup together in a microwave or in a small saucepan.
  5. Add soda/milk mixture and syrup mixture with the eggs to the ingredients in the bowl.  Do not over-mix as this will toughen the mixture.
  6. Spoon into lightly oiled or non-stick muffin pans (three-quarters fill).  Bake for 15–20 minutes or until a skewer inserted comes out clean.

Variation

You can also use this recipe to make a cake instead of muffins. Baking time will take longer.

  • 2 cups unprocessed bran
  • ¾ cup dates, chopped
  • 3 ripe bananas, mashed
  • 1 tspn baking soda
  • 1½ cups reduced-fat milk
  • 50 g margarine
  • 6 Tbsp golden syrup or maple syrup
  • 2 eggs, lightly beaten
