Banana and carrot slice

A versatile recipe that could be served as a slice, cake or muffins.

Banana and carrot slice

Method

  1. Heat oven to 175°C.
  2. Lightly spray a 25cm x 30cm baking tray with oil and line with baking paper.
  3. In a bowl, add wholemeal flour. Sift in white flour, baking soda and baking powder. Combine.
  4. In a large bowl, whisk together eggs, brown sugar, yoghurt, oil, and milk.
  5. Add dry ingredients to wet ingredients and fold gently.
  6. Add mashed banana and grated carrot to mixture. Continue to fold gently.
  7. Spoon mixture into lined tray and spread evenly.
  8. Bake for approximately 30 minutes or until golden brown and cooked through.
  9. Cool in tray.
  10. Slice into 24 squares (cut smaller portions for younger children). Remove from tin.

You need

  • ¾ cup (110g) wholemeal flour
  • 1⅓ cups (200g) white flour
  • 1 tspn (5g) baking soda
  • 1 tspn (5g) baking powder
  • 2 eggs
  • 3 Tbsp (35g) brown sugar
  • 3 Tbsp (50g) natural yoghurt
  • ¼ cup (65ml) vegetable oil
  • ¼ cup (65ml) reduced fat milk
  • 3-4 (300g) mashed banana
  • 2 (2cups, 200g) carrots, grated
