Baked potato
A great source of complex carbohydrates to give you energy.

Method
- Heat oven to 180°C.
- Wash potatoes. Prick potatoes all over with a fork.
- Place potatoes on a lightly greased roasting dish and bake in oven for approximately 1 hour or until a knife inserted into them comes out easily.
- Remove from oven and allow to cool.
- Cut the tops off the potatoes. Scoop out the inside of the potatoes and place in a bowl.
- Mash the potato and mix in the corn, spring onion and capsicum.
- Stuff this mixture back into the potatoes. Sprinkle with the grated cheese.
- Place potatoes back on the roasting dish and in the oven.
- Bake for approximately 15 minutes or until hot through and the cheese is melted.

- 1 spring onion
- ¼ capsicum
- 8 Tbsp cheese, grated
