Asian edamame dip

Edamame is a Japanese name for fresh soy beans, these can be bought frozen in their shells or shelled. Use the shelled variety for this recipe.

Method

  1. Boil the edamame for 4-5 minutes then drain and cool in cold running water.
  2. Place drained edamame and the remaining ingredients into a food processor and blend until smooth.

You need

  • 450g edamame
  • 15ml rice vinegar
  • 45g mayonnaise
  • 15ml lemon juice
  • 15ml low sodium soy sauce
  • 5g fresh ginger, grated
