Apple & Blueberry Pikelets

A great way to include fruit into snacks!

Apple & Blueberry Pikelets

Method

  1. Sift flour and baking powder into a bowl.
  2. In another bowl, beat egg and sugar.
  3. Add apple and milk to egg mixture, stir to combine.
  4. Add wet ingredients to the dry ingredients.
  5. Gently fold in blueberries.  
  6. Heat fry pan and drop tablespoons of mixture onto a hot, lightly greased non-stick frying pan.
  7. Turn over when bubbles start to burst on top.
  8. Cook second side until golden.

  • 1/2 cup wholemeal flour
  • 1 tsp baking powder
  • 1/4 cup sugar
  • 1 egg
  • 3/4 cup trim milk
  • 1 apple, grated
  • 1/2 cup blueberries, fresh or frozen
